These are for a carry-in at work tomorrow. There's a German chocolate, a red velvet (with piped on snowflakes, sprinkled on white sugar, and poured over cream cheese icing for a snowy look), and a yellow (spaghetti and meatballs!).

Peppermint Mocha Cupcake

Peppermint Mocha
Espresso infused Chocolate cake
dark chocolate Ganache filling
Topped w/ Peppermint Buttercream
& peppermint pieces.

My daughter requested "kittens playing with yarn" as her cake theme this year.
None of us like fondant much (I've always thought the stuff tastes like marshmallows mixed with wax candles) so I was trying to figure out something to use that would be tasty and not just shoved aside when it came time to eat.
She's VERY fond of marzipan so I ended up sculpting the kittens out of the almond paste to put on her cake. That was a huge hit, and it turns out that it goes really well with chocolate cake!

By the way, if you're ever planning on doing stuff with the marzipan, I found the "potato" marzipan balls to both be easier to work with as well as tastier than the stuff that comes in a brick for the "official" sculpting use.

Oh, and this icing recipe is not the easiest to work with, in that it's fluffy, so my yarn ended up looking a wee bit blobby (but then, that may be a result of my not-so-professional knowledge of how to do it right, and I'm no expert with piping) but OH MAN, IT IS SO GOOD! Beats the heck out of any buttercream or regular frosting recipe I've ever tasted!
I am sharing this recipe for the yumminess with you:

Take 8 oz cream cheese and 1 cup confectioners' powdered sugar in a mixing bowl, and whip with an electric beater until smooth.
Then add about 1/2 cup of heavy whipping cream and beat again until you have a spreadable consistency.

Hi-- I used to be around quite a bit, but then I got pregnant with twins. I had morning sickness my whole pregnancy and couldn't bear to look at food pictures!

My big boy turned five in November, and I did him two cakes (one for home, one for daycare).

Christmas Cupcakes

I was asked by my Dad to bake a few dozen Christmas themed cupcakes for his Work' Christmas Party that took place Friday.


To the Left are inspired by a Mint Chocolate Candy cane I received at a tree farm( Vanilla cake base, White Chocolate buttercream w/ a touch of Mint) , On the Right are Double Chocolate. All Toppers are edible

Advice? Opinions?

Hello all,

I'm making a Pac-Man cake for a friend's birthday, and it'll be the first non-vegan cake I've made in a while. I love vegan baking, but I gotta say, I'm really enjoying working with traditional ingredients! I'd forgotten how much better my cakes work when I have eggs to stabilize.

So I'm facing more options than I usually face. Generally, I use a combination of vegan "buttercream" (using Earth Balance buttery margarine, shortening, and soy/almond milk, with maybe some silken tofu for body) and homemade vegan fondant (no MMF!) But for this cake, I can use OMG Swiss Meringue! Or royal icing! Or I could make MMF! The possibilities are endless! BWAHAHAHAHA!!!

... ahem.

With endlesss possibilities come endless choices )
I'm ridiculously excited about this cake. Different ingredients! Whee!

And so begins the Holiday Baking Season ...

I was asked to make a cake for a committee meeting today at my office:


I should have made the wreath bigger, but it's not too bad.

More will come by year's end, culminating in what will be my most complex cake project to date.

Tiramisu cake filling?!

My fiance and I were wedding cake tasting a couple weeks back and we went to a place that had this tiramisu-like cake filling...It was amazing! Very subtle but it was soooooo good with the chocolate cake they paired it with! I was wondering if any of you have a tried and true recipe for tiramisu filling for a chocolate cake because I wanted to make one for his birthday this weekend and since he is extremely picky, I don't have many choices in the birthday cake area.

Snowman Birthday Cake!

It's been *ages* since I posted to this group as I've not done any baking in months :o( However, it's my partner's Birthday on Monday and so it was time to get baking again :o) He requested a snowman using the same recipe I used last year (a coconut cake with coconut frosting) So here it is...

Snowman Cake


The buttons are Cadbury's chocolate buttons, and the nose is some marzipan with a little red food colouring worked through. It was made from just two normal circular cakes, with a bit of cunning cutting. There was even some leftover bits so I can vouch for its tastiness already ;o)
